For our whites, Chenin Blanc and Chardonnay are whole bunch pressed and gently fermented in a combination of new and seasoned oak barrels, occasionally with concrete eggs. The wines rest on fine lees for six to nine months, adding texture, depth, and a soft, inviting mouthfeel. Each decision—from the percentage of new oak to the choice of vessel—is made to enhance elegance without masking the fruit.
Our reds, Cabernet Sauvignon and Cinsault, are carefully destemmed, crushed, and fermented in open-top fermenters with daily punch downs. After maceration, the wines mature in seasoned French oak barrels for 12 months, developing richness, structure, and subtlety.
